Dozen Wilson

Here is another recipe of my own invention and I have served my family and friends for many years. It is simply called "Mom's Yummy Enchiladas". It's fast, easy, for diabetics, and a complete meal-in-one. In today's busy society, we are all looking for something that is quick and easy, tastes good, not break the food budget, and is tasty. I think this recipe fits the bill. You have meat, dairy products, vegetables and bread (tortillas) at the entree. Simply add the complement of the lettuce and diced tomatoes, which added the salad. What could be easier? And tasty, too! If you like Tex-Mex, you should love this recipe! Happy eating!

Yummy mom Enchiladas

1 1 / 4 pounds lean ground beef

1 mild can chili beans

1 dozen flour tortillas

1 medium onion, chopped

3 / 4 lb grated cheddar cheese, divided

1 can enchilada sauce, your "heat" preference as desired

Brown ground beef in large skillet over medium heat. Pour into a colander and drain well. Rinse hot water to remove fat. The beef in the skillet and add beans. Heat to simmer and cook for 5-10 minutes. Divide the meat / bean mixture in a uniform among the 12 tortillas concentrated mixture in the center of tortillas. Divide the onion evenly among the tortillas by adding the top of the beef and bean mixture. Top with about 1 tablespoon of cheese on the tortilla. Roll tortilla tightly around the mixture and hold together with a toothpick. Put together in a baking dish. Pour enchilada sauce over tortillas, covering each. Sprinkle remaining cheese over the sauce. Add to casserole dish lid or cover with foil if the lid not available. Bake in oven at 350 degrees for 15-20 minutes until bubbly and cheese is melted. Remove from oven and place on individual plates or a serving platter. Garnish with lettuce and diced tomatoes. Serve with sour cream, guacamole and salsa, if desired.

This recipe is suitable for diabetics as it contains proteins in meat, beans and cheese to offset the carbs.

NOTE: Be sure to remove toothpicks before serving! Choking on a toothpick ESCONDIDO May be fatal. That said her kitchen was not killed anyone!
